Savory Italian Macaroni and Cheese Recipe

OK, I’ve decided that even though this is primarily a blog about my crochet life, I just can’t overlook the fact that I also cook fairly often. (The Fam gets hungry, so not really a choice there.)
But, many times I cook the same way I crochet, I experiment with some elements that I think may work well together and see what happens. The following recipe is the result of today’s experiment.
On my way home from work I decided that I wanted to make something quick and easy for lunch and started a mental inventory of what I have in the pantry. Velveeta, elbow macaroni…yes! Mac n Cheese! But, wait. I also have canned tomatoes. (I love tomatoes.) How about Italian Mac n Cheese? This is sounding better.
So I commenced to putting the following ingredients together and it turned out mighty tasty!
I cooked 3 cups (dry) macaroni
In another pan I heated:
1 can of Hunts diced tomatoes with basil, garlic and oregano
A sprinkle of each: garlic powder and onion powder
Once hot I added: 1/2 cup parmesan cheese and 8 oz Velveeta
It seemed a little thick so I added: 1/4 cup of red cooking wine
Once the Velveeta was all melted, I poured this mixture over the cooked and drained macaroni.
The Fam approved!
And I actually measured (most of) my ingredients this time. I usually don’t. (OK, I was anticipating that IF it tasted good, I would blog about it. =)
